Peeled garlic may lose its flavor a little more quickly, and I do believe it has a shorter shelf life. But that doesn’t keep me from using it at home! When I know I will use a lot of garlic, I buy a container of peeled cloves. But for more moderate use, I’ve recently discovered Melissa’s peeled garlic, which is sold in 6-ounce bags, which are then separated into individually wrapped packages with just four cloves each. I haven’t tested this, but it seems logical to me the garlic keeps better and longer this way because the surface it is not constantly exposed to air.
