Should eggs be at room temperature when I’m making a cake?

Use room temperature eggs for cakes and other baking; they’ll mix more easily and smoothly with your other batter ingredients and will beat to greater volume.

The exception to this (and there’s always an exception, isn’t there?) is when you need to separate eggs: it is easier to separate cold eggs.
