If the most adventurous your pantry flour selection gets is whole-wheat, don't worry: You can grind old-fashioned oatsin a blender or food processor for easy, homemade (and gluten-free!) oat flour, which can replace up to one-third of the wheat flour called for in a recipe. 1 ¼ cups of old-fashioned oats will yield 1 cup of oat flour.
