To keep food warm without overcooking, set your oven to the lowest temperature (which is probably 200 degrees F) and cover the food with foil. Use an oven thermometer to keep track of how warm the oven gets: when the temperature goes above 225 degrees F or so, turn your oven off and the food will stay warm in the residual heat.
