There are three things you can do to help avoid the dreaded "fish stink." First, make sure you are cooking really fresh fish. This is especially important with oilier fish, which will tend to be more odorific. Second, open the window or turn on the fan before you start cooking. Finally, if all else fails and your house smells, simmer white vinegar on the stove until the smell goes away. Your kitchen may temporarily smell like a salad, but that is very short-lived, and far preferable to the lingering smell of yesterday's fish.
