Look for glossy, dry berries with even color and clean, dry pert leaves on top. (The green cap of leaves is called the calyx. The sweetest strawberries will not have white or green areas.

Keep strawberries in the refrigerator (the bottom shelf or crisper drawer) in their original vented container. (Do not store in a closed container, which traps moisture and promotes spoilage

To wash strawberries—which you should do right before serving and not ahead of time—rinse them under gently running cold water. Remove the calyx after washing and gently pat the fruit dry.
