When gardens and farmer's markets are brimming with bell peppers, it's helpful to keep some storage information in mind.  Bell peppers keep well in the refrigerator for 1 or sometimes even 2 weeks when kept in a plastic bag in the crisper drawer. To freeze bell peppers, roast them first, toss with a little olive oil (and garlic, if you like) and keep them in an airtight container.
