My go-to lean cuts of beef are flankand sirloin steaks, tenderloin, eye and top round (for roasts), and  ground sirloin with less than 15% fat.

In 2012, new meat labeling laws will go into effect requiring producers to put nutrition information on packages of fresh meat. Until then, you can get a list of the 29 leanest cuts of meatfrom the National Cattlemen's Beef Association.
