Pecan pie freezes beautifully: just let your freshly baked pie cool, then wrap it in several tight layers of plastic wrap. Seriously: use more plastic wrap then you think you need, because the more airtight the wrap, the better the pie will maintain it’s wonderful flavor and texture.
Pumpkin pie does not freeze well. When you thaw it, the texture changes, and it tends to “weep” water. The good news is that once you have the puree (be it fresh or canned), pumpkin pie is fast and easy to make. Also, if you start with fresh pumpkin, you will be happy to know the puree freezes well.
