Can I freeze citrus zest? If so, for how long?

Absolutely! Anytime I need lemon, lime or orange zest, I zest the entire fruit and freeze the extra in 1 teaspoon portions. Place the zest on a small square of plastic wrap and twist up the corners to form a purse-like enclose. Secure it with a twist tie and place the individual packets of zest together  in a heavy-duty zip-top plastic  freezer bag and store in the door of your freezer. It retains its flavor for about 2 months.
