The terms green onion and scallions are often used interchangeably—more so in some parts of the country than others. A scallion generally refers to a young baby onion—one that is so young that the white bulb at the bottom barely bulges into a bulb shape. To make it even more confusing, these are also sometimes referred to as “spring onions”. They are milder tasting (less sharp) than more mature green onions.
