What's the best way to heat tortillas?

When you heat tortillas they become more pliable, which makes them easier to fold or roll.

As soon as you take tortillas out of the package, stack them under a damp cloth or paper towel until you are ready to use them.

To heat, place a tortilla directly on a gas stove grate, and remove as soon as the tortilla gets light brown spots or puffs in spots. If you don't have a gas stove, you can do this on a grill or grill pan.

You can also heat tortillas in the microwave: Wrap up to four at a time in a damp paper towel and microwave for about 30 seconds, until just warmed. Don't warm them ahead of time‚ as soon as they cool off, they become less pliable again.
