My esteemed colleague and friend Susan Purdy wrote what I consider to be one of the definitive high-altitude baking books, Pie in the Sky Successful Baking at High Altitudes, published by Morrow in 2005. For every recipe, you'll find individual instructions for baking cakes, pies, cookies, breads and pastries at sea level, 3,000, 5,000, 7,000 and 10,000 feet.
