Summer is here, and summer food is where it's at. The fresh produce is plentiful, and because of that, we've got a a great treat to highlight for today's Cook With Confidence post. The thing I loved best about this
First, you'll want to slice up your nectarines to a 1/4 inch thickness. Make sure your nectarines are fairly ripe, but not too mushy. If they're as hard as rocks, you might want to wait a few days before baking these tarts to let your fruit ripen some more. I was able to get the amount of slices I needed (around 2-3 per tart) by using 4 medium sized nectarines.
Pre-made pastry dough is so wonderfully easy and awesome to use. By purchasing it pre-made, it comes as two separate sheets of dough all folded up in a neat little box. Just unfold it, lay it flat, and slice it into multiple 3in x 3in squares. My pastry dough was able to be sliced into 9 squares instead of the 6 posted on the recipe, so I ended up with a few more tarts overall than I bargained for. It's helpful to space the tarts apart from one another so they don't stick together on the pan.
When the sides and tops have browned, they're done. For me, this took about 20 minutes. You'll want to let them cool off a bit before enjoying them, because those nectarines will be hot!
