Bake Sale Classics: Pies

There are a number of explanations about the origins of the name "chess pie" but it's generally a single crust pie with a sweet filling of eggs and butter. This one is distinct because of the ready-made shortbread crust. It's a great pie for bake sales because the filling is somewhat firm and the shortbread crust is sturdy.
