Falafel Pitas with Cucumber-Yogurt Dressing
Popular in Greece and Middle Eastern countries, traditional falafel is made by deep-frying balls of spiced, ground chickpeas. Here, falafel patties are pan-fried and topped with a homemade yogurt dressing, then tucked in whole-wheat pita halves.

A croque-madame is a variation on the croque-monsieur, a French twist on grilled ham and cheese. Instead of dipping the sandwich in egg before sautéeing in butter (as you would for a croque-monsieur), grill the sandwich first and top with homemade Mornay Sauce, cheese, and sunny-side up egg.

Pressed Cuban Sandwiches
Baked pork loin roast is a great base for many sandwiches, including this Cuban favorite. Spread mustard on Cuban bread and fill loaves with sliced pork loin, baked ham, provolone cheese, and dill pickle chips.
