Mediterranean Chicken and Vegetable Kebabs

The simple oregano, lemon juice, and olive oil marinade lends a fresh, Mediterranean flavor to these simple and quick kebabs. Onions, zucchini, and fennel all pair well with the chicken, but you can use other veggies like red bell peppers, mushrooms, and shallots.
