counts. If you buy too lean a cut, the patties will end up tough and dry. Get freshly ground chuck with at least 18% fat content
for the most flavorful burgers. Flip the burgers only once to keep them from drying out, and resist the urge to press down
on them–Flip more and you'll lose all the tasty juices.
