Becuase chasing down the ice cream truck at 8 a.m. is too much work
If you’ve purposefully let a bowl of ice cream melt into soup on a hot afternoon, you understand the sweet, creamy, pleasure that is drinking melted ice cream. Basically thick cereal milk, melted ice cream is one of those perfect not-quite-foods I think about on a regular basis. If I could have it my way, any time the temperature crawls above 80ºF, I would sit down to a cold bowl of melted ice cream for breakfast. Is it a nutrient-dense meal? Not quite, but YOLO and such. I’ll still let a scoop of mint chocolate chip melt in the morning on special occasions, but when the craving for melted ice cream hits, I make this smoothie instead.
I always keep a few peeled bananas in a container in the back of my freezer, but if you don’t, be sure to stick one in before you set out to make the melted ice cream smoothie. The frozen banana factor thickens and chills the smoothie exponentially while also adding creamy flavor (ice will thicken and chill too, but it just can’t compete with the creaminess).
Once you obtain a frozen banana, carefully chop or break it into a few pieces. Drop the banana into a blender (high-powered if you have one) and toss in 1 pitted deglet noor date, 1 tablespoon of your favorite nut butter, ½ teaspoon chia seeds, ¼ teaspoon cinnamon, and a pinch of kosher salt. If you want to flavor the smoothie more, add ¼ teaspoon vanilla or mint extract, 1 tablespoon cocoa powder, or 1 teaspoon instant espresso powder.
Finally, add ¼ cup coconut milk from a well shaken can of full-fat coconut milk. This part is essential to creating the melted ice cream texture, as coconut milk basically tastes like heavy cream went to the beach. Add ¼ cup of your preferred milk for more liquid, then let the blender rip.
When the smoothie is decently blended, toss in 1 tablespoon cocoa nibs or chocolate chips and blend for another few seconds, until the chocolate is broken up a bit but not pulverized.
Pour the smoothie into a glass and embrace the brain freeze as you chug.
