Homemade Energy Bars

Everyone who's worked in an office knows that the 3 pm snack cravings can hit with full force, leaving you salivating over a snack machine full of M&Ms, pork rinds, Snickers bars, and chips.  Sure, it's easy (and let's face it, tasty) to grab something sugary or salty from the break room's vending machine, but why not prepare yourself for late afternoon munchies by stocking your desk with healthy tidbits?  Mini bags of microwave popcorn, fruit, and nuts are all great snacks to bring from home, but it can be fun to branch out a little too. 

Recently I tried the recipe for Sunset's "Peanut Butter Cranberry Go-Bars," which feature rolled oats, oat bran, flax seeds, whole-wheat flour, peanut butter, and delicious chunks of cranberries, peanuts, and figs.  They were wonderful and SO easy to make.  I wrapped them all in plastic wrap and stuck them in the freezer.  They were defrosted enough to eat by the time I got hungry, but you can also microwave the bars for 10-15 seconds if desired.
