Banana French Toast

If the yummy-looking waffles in the previous post haven't tempted you enough, here's another great idea for your breakfast on Christmas morning!

Banana French Toast

(4-6 servings)

  • 2 large ripe bananas
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 cup milk
  • 8 slices homemade-quality white bread (Texas toast works well)
  •  1 teaspoon ground cinnamon
  • 1/4 cup powdered sugar

Puree the bananas, vanilla, egg, and milk in a blender or food processor. Preheat a griddle or heavy skillet and add just a little oil. If using an electric skillet, preheat to 375 degrees F. Dip bread in batter, turning it to absorb batter evenly.  Cook until lightly browned on one side. Turn and cook until done. Dust with cinnamon and powdered sugar.
